Stuffed Peppers

6 green bell peppers 1 tablespoon EVOO 1 onion- diced 1 clove garlic- minced 1 lb hamburger 1 cup cooked rice 1 can diced tomatoes 1 cup cheese Preheat oven to 375°F. Bring a large pot of water to a boil. Once boiling, add peppers and pepper tops and cook until tender, 6 to 7 minutes. Make filling: Warm olive oil in a large frying pan over medium-high heat. Add onion and cook, stirring occasionally, until translucent. Add garlic and continue cooking until just softened. Add beef, salt and pepper and cook. Add tomatoes and rice and cook 5 minutes longer. Stir in 3/4 cup cheese. Fill peppers with meat mixture. Sprinkle mixture with remaining cheese and top with pepper lid. Bake until cheese is melted and peppers are heated through, about 5 minutes. Serve hot.

Monday - Stuffed Peppers Tuesday - Chicken fried steak strips and roasted broccoli with smashed garlic Wednesday - Creamy mac and cheese and roasted sweet potato and onions Thursday - Fully Loaded baked potato soup Friday - Pizza and roasted cauliflower crust pizza Saturday - Goulash and Rice Pudding Sunday - Roasted Chicken with Veggie packets We are going to be trying a lot of new things this week. Should make for an interesting week!

Menu Plan Monday January 2nd-8th

Things here on the farm are easy to plan ahead for. However, it doesn't always go that way. So here is my attempt at the first Farm Menu Plan. Monday - lunch- roast beef sandwiches dinner- spaghetti, some sort of salad Tuesday Lunch- sandwiches dinner- turkey pot pie Wednesday Lunch- spaghetti dinner- cowboy potatoes, corn Wednesday lunch- sandwiches dinner- chicken and potato chowder Thursday lunch- soup dinner- tomato and grilled cheese, green beans Friday lunch- leftovers dinner- pizza, some sort of salad Saturday lunch- breakfast dinner- tin foil dinners, extra veggie packet for me. Sunday lunch- breakfast dinner- roasted chicken, green beans

Happy 2012!

Happy New Year! I am so excited for 2011 to be over. It was a hard year for my family. I am going to make 2012 count. I have many New year Resolutions. I can't wait to get started! What are your plans for the New Year?
